Great Soup!!


Dad made this soup tonight and it was really good. It was quick and easy and ready to eat in about a half hour. Try it!


Quick Chicken Noodle Soup

Heat the broth mixture in the microwave to jump-start the cooking. Meanwhile, sauté the aromatic ingredients in your soup pot to get this dish under way. Though we like the shape of fusilli, you can also make this soup with wide egg noodles, rotini, or even orzo.
2 cups water
3 (14 1/2-ounce) cans chicken broth
1 tablespoon olive oil
1 cup chopped onion
1 cup chopped celery
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 medium carrot, chopped
6 ounces rotini pasta
3 skinless, boneless chicken breast chop and skillet fry
2 tablespoons chopped fresh flat-leaf parsley

1. Combine 2 cups water and chicken broth in a microwave-safe dish, and microwave at HIGH for 5 minutes.
2. While broth mixture heats, heat a large saucepan over medium-high heat. Add oil to pan; swirl to coat. Add onion, celery, salt, pepper, and carrot; sauté 3 minutes or until almost tender, stirring frequently. Add hot broth mixture and pasta; bring to a boil. Cook 7 minutes or until pasta is almost al dente. Stir in chicken; cook 1 minute or until thoroughly heated. Stir in parsley.

Apple is sooo cool. Now they are making the ipod touch an augmentative device for students to use for communication and replace the old huge, heavy dynavox.

Oh the weather outside is FRIGHTFUL...


Brrrrr....it has been cold here and snowy. This was the temperature Friday when I left for work, by the time I got to work it was -5. We are expected to be this cold again tomorrow. Today I think we will hit freezing at 32. I absolutely love it. It feels like December and Christmas......mmmmm add lots of hot chocolate and a fire in the fireplace and it's awesome. I am hoping for lot's of snow this weekend and maybe a snow day Monday....that would be nice.
