It's Spring Break!!!


i am so happy for spring break.....just got back from Matt's! Had a great time! Played Band Hero for hours and laughed so hard we couldn't sing. I liked the drums the best. Sam you would do great on the guitar. Check Nikki's blog for pictures. Matt took me out to fire my gun. I like my gun! Thanks Matt and Nik for a great weekend! Here's to a whole week home....YEAH!!!!

Springtime in the Rockies


We are under a winter storm warning starting Thursday thru Saturday. Just in time to welcome spring. Gotta love it though! We are dropping 40 degrees Thursday night. I guess this way we won't get bored with the weather. I am driving to Grand Junction Friday night.....wish me luck!!

Great Soup!!


Dad made this soup tonight and it was really good. It was quick and easy and ready to eat in about a half hour. Try it!


Quick Chicken Noodle Soup

Heat the broth mixture in the microwave to jump-start the cooking. Meanwhile, sauté the aromatic ingredients in your soup pot to get this dish under way. Though we like the shape of fusilli, you can also make this soup with wide egg noodles, rotini, or even orzo.
2 cups water
3 (14 1/2-ounce) cans chicken broth
1 tablespoon olive oil
1 cup chopped onion
1 cup chopped celery
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 medium carrot, chopped
6 ounces rotini pasta
3 skinless, boneless chicken breast chop and skillet fry
2 tablespoons chopped fresh flat-leaf parsley

1. Combine 2 cups water and chicken broth in a microwave-safe dish, and microwave at HIGH for 5 minutes.
2. While broth mixture heats, heat a large saucepan over medium-high heat. Add oil to pan; swirl to coat. Add onion, celery, salt, pepper, and carrot; sauté 3 minutes or until almost tender, stirring frequently. Add hot broth mixture and pasta; bring to a boil. Cook 7 minutes or until pasta is almost al dente. Stir in chicken; cook 1 minute or until thoroughly heated. Stir in parsley.
